Spinach and Sqaush

I have doing a lot of fashion posts on the blog, so I decided I would switch it up with a food post. Butternut squash has been one of my favorite vegetables this winter. I have loved experimenting with it in different dishes, and this dish I made for dinner last night was one of them. The original recipe calls for pumpkin, but I decided to switch it out for butternut squash. It also calls for a lot more butter than the healthy amount, so I put about a fourth of what was called for (still an unhealthy amount). Here is the finished product!DSC_0632

Skip the Thai Takeout!

Today I found a great recipe for a delicious thai red coconut curry that will make you skip your thai takeout! I tweaked the recipe a little bit and added some broccoli, water chestnuts, carrots, tomatoes, bell peppers and snap peas. Β I was cooking for a vegetarian crowd so I swapped the chicken out for some extra firm tofu which still tasted awesome. Instead of the recommended pasta I decided to serve this with some asian sticky rice. Try it out and let me know how you liked this recipe!
