Today I found a great recipe for a delicious thai red coconut curry that will make you skip your thai takeout! I tweaked the recipe a little bit and added some broccoli, water chestnuts, carrots, tomatoes, bell peppers and snap peas. I was cooking for a vegetarian crowd so I swapped the chicken out for some extra firm tofu which still tasted awesome. Instead of the recommended pasta I decided to serve this with some asian sticky rice. Try it out and let me know how you liked this recipe!
