I have doing a lot of fashion posts on the blog, so I decided I would switch it up with a food post. Butternut squash has been one of my favorite vegetables this winter. I have loved experimenting with it in different dishes, and this dish I made for dinner last night was one of them. The original recipe calls for pumpkin, but I decided to switch it out for butternut squash. It also calls for a lot more butter than the healthy amount, so I put about a fourth of what was called for (still an unhealthy amount). Here is the finished product!
Finished it off with some freshly grated parmesan!
